Enoteca Boccaccio is a new Italian focused wine bar/restaurant opening at the end of May. We are on the look out for a talented waiter to join our team. The family behind an Italian deli with a cult following in Melbourne’s inner east will soon add a wine bar to their portfolio. Our menu offers a wide variety of dining choices, for the most discerning tastes, using the freshest, high quality, locally sourced ingredients.  With our seasonal menu, Augello’s chefs are creating new and traditional tastes, in a stylish and modern environment. By 1974 it had switched to selling booze and nothing else. These days the grandsons of the original owners run the business and claim they have the largest online range of alcohol in the country. Nicks doesn’t sell beer but stocks 100 tequilas, 200 gins, 300 rums and 1000 whiskies, including 500 single malts. Then there are a staggering 20,000 wines, including 16,000 from Australia and 2000 from France. These range from $10 chardonnays to 20 different vintages of Penfolds Grange, some retailing above $4000 a bottle.

Founded in 1997, well before natural wine entered the conversation, the shop has great knowledge of, and respect for, wine’s traditional titans. Prince imports several domaines exclusively, including three houses in Champagne. Australian bottles come from stalwarts such as Best’s Great Western, Mount Mary, Giaconda and Torbreck. The store typically carries between 3500 and 4000 bottles. Before each wine is added to the site, it crosses  the palate of a staff member with a Wine and Spirit Education Trust (WSET) qualification.

The vintage is normally harvested in early April when optimum taste, sugar concentration and acidity are achieved. The fruit is hand picked and transported in small crates to the winery for crushing. The vines have been hand pruned, and the grapes hand picked, by the same team of local workers since the beginning. The micro climate is very favorable for viticulture because the site is protected from wind and frost, and the soil drains well.

But laws have loosened over time, with restaurants slowly granted the right to a licence without a community vote. The local customer is at the heart of everything we do at Sessions. Our chief winemaker, Paul Baggio embarked on his journey in his early 20’s working in Italian wineries, and completing studies of winemaking and brewing in Europe & Australia.
